Montechico selects and classifies as Gran Reserva Ham the kind of acorn ham that comes from pigs bred with acorn during the two 'montaneras' (fattening periods), and which have a curation period of 36 months (3 years) and a minimum weight of 8kg per ham piece. The Iberian Gran Reserva ham is the product of the highest quality in Montechico
Iberian acorn ham 'Gran Reserva', from our best pigs, bred with acorn and fodder during the first 'montanera' (fattening period), and the following year they are bred the same way, during the second fattening period, thus reaching 100/200 kg of weight and 15 months of age. During the second 'montanera' they gain 50/70 kg more, fed with acorn in order to reach an average weight of 170/180 kg, alive, before they are sacrificed at the start of the calendar year. The meat comes, therefore, from mature pigs, at least 18-months-old, and with streaks of fat that give the Iberian acorn ham 'gran reserva' a unique taste and texture.
